Two Orange County-based fast food chains are offering cauliflower rice as a healthy option for the new year.

Cauliflower rice is made out of the high fiber vegetable ground into rice-shaped granules and served as a low-carb substitute for grain.

Chipotle Mexican Grill’s Cilantro-Lime Cauliflower Rice fits into the Newport Beach-based company’s clean foods strategy.

Cauliflower rice is grilled and mixed with hand-chopped cilantro, lime and salt in-house daily, according to a news release.

Chipotle said it works with several diets, including keto, Whole30, paleo, vegan, and vegetarian.

Cauliflower rice costs $2 extra in Chipotle’s burritos, tacos, and bowls, while white and brown rice is included as a basic ingredient.

But cauliflower rice is included in some of Chipotle’s Lifestyle Bowls, which can be ordered online for $9.65-$12. Lifestyle Bowls aren’t on Chipotle’s menu boards at restaurants because food ordered in-store is made to order.

El Pollo Loco, based in Costa Mesa, is also introducing cilantro lime cauliflower rice as an ingredient in its Pollo Fit Bowls, which the chain is bringing back to its menu for the new year.

There are three, priced $6.99-$7.49: the Double Protein Avocado Pollo Fit Bowl, the Double Protein Fajita Pollo Fit Bowl, and the Double Protein Mexican Caesar Pollo Fit Bowl.

But cauliflower rice can also be ordered separately as a side for $2.49-$2.99.

It’s not on the board as a side on the Chipotle menu board, but in a test purchase it cost $2 as a separate item.
